Sour cream curdles when heated and more often, it makes your dish look unappetizing. To prevent lumps from forming, stir 1 teaspoon of cornstarch into 1/4 cup of sour cream before adding it to the food you are cooking. The white powder stabilizes sour cream by preventing the dairy proteins from coagulating, so your food looks and tastes great.
