With grocery items continuosly going up, more and more moms are having problems stretching the already tight budget. It’s getting harder and harder to whip up yummy meals that are good for you. Here are some smart solutions I found for keeping meals delicious and nutritious but still on the budget.
1) Pack in extra nutritients and save money by stretching ground meat with veggies. For example, if your making tacos with ground beef or chicken, add chopped onions, green chilis, corn and black beans. Spoon into tortillas and garnish with little cheese.
2) Make vegetables the star of the meal and think of meat not as a main course but an ingredient. If you plan to serve steak for dinner, cut them up and serve it out across a bed of buttered vegetables or vegetable pilaf. Make kebabs by alternating meat with 3 cubes of cut-up veggies.
3) Instead of piling your kids’ sandwich high with cold cuts, use just a couple of slices, add shredded lettuce, sliced cucumber, tomato and mustard.
4) Make use of eggplants. The veggie’s meaty texture adds fiber and vitamins to your meals. Slice an eggplant thickly, grill and add to pasta sauce. Your kids won’t even notice there’s eggplant in the sauce.
